All of these traditional quick breads are made with all purpose flour. I can do a whole wheat/all purpose 50/50 blend upon requests. These breads are also made with coconut sugar. Why coconut sugar? Coconut sugar is not processed like refined white sugar. It is obtained by heating the sap of the coconut flower until most liquid has evaporated. Coconut sugar also has a much lower glycemic index than white sugar. It won't make your blood sugar spike and has a small amount of minerals such as, zinc, iron, calcium and potassium.
